Food Fairy #1

On the earlier posts I briefly mentioned about making home made soups and food which are cheap and last for ages, well, here is a recipe for you to try - Minestrone Soup! This recipe makes 2-3 servings and takes around 20 minutes to make from scratch. Taken from here and slightly modified to suit less people.

Ingredients:

1 cup of chopped onion
2 1/2 garlic cloves minced
1/2 celery stick, diced
1/2 carrot stick, diced
1 medium pepper, diced
1 cup of water
1 cup of chicken broth (oxo cube possibly)
1 14 oz of tomato puree (approx 200 g)
1 cup of pasta, rice or barley
1/2 tbs oregano
black pepper to taste
1/2 tbs basil
1 tbs salt

Equipment you will need:

Large Soup Pot or Dutch oven with Cover
Chopping Board

Knife

Wooden Spoon
Vegetable Peeler

Measuring Cups and Spoons



Directions:

1. In your soup pot, heat the oil and add onions, garlic and salt. Saute for about 5 minutes.

2. Add the celery, carrot, basil, pepper and oregano. Cover the soup and simmer on a low heat for around 10 mins.

3. Add pepper, chicken broth, water and tomato puree. Cover and simmer for a further 15 mins.

4. Add pasta and bring to the boil. Simmer until the pasta is tenter and serve immedietely.
